The sugar sweet late harvest grapes known as Spatlese are grown on the wine estate Johanneshof Reinisch, Tattendorf in the Thermenregion, Lower Austria. Once fermented, the young wine gets stored in oak barrels, its sediment removed several times before being placed into carboys to age. And there it stays till the carefully crafted vinegar loses all burning acidity and it mellows into a sweet tart harmony. Adds spark to leafy salads. refinement to fried fish, goulash and legumes.
